9 graham squares, crumbed
1 cup lowfat cottage cheese
3/4 cup part skim ricotta
3/4 cup egg substitute
1/2 cup sugar
1 tsp vanilla
1/2 tsp nutmeg
1/8 tsp salt
15 oz can pumpkinRecipe
Preheat oven to 350 degrees. Spray 9" glass pie pan. Sprinkle graham crumbs over the bottom.
In processor or blender combine cottage cheese and ricotta. Put in a large bowl.Stir in egg substitute, sugar, vanilla, nutmeg, and salt. Reserve a 1/4 cup of the batter and set it aside. Add the pumpkin to the batter, and stir. Place batter in the pie pan. Put three dollops of the reserved white batter on top and swirl with a knife (for Halloween, make a spider web pattern). Bake 45-50 minutes until knife comes out clean. Cool. Refrigerate.
