Cookie: 1 pt. Easy Peanut Butter Cookies

List of Ingredients
1 1/2 cups all purpose flour
1 1/2 T. cornstarch
1 3/4 tsps baking powder
1/2 tsp baking soda
( I was out of cornstarch and baking powder so I used baking soda for all 3 of the above ingredients and the cookies were still great!)
3/4 cup firmly packed brown sugar (I used light brown sugar)
1/4 cup granuated sugar
1/4 vegetable oil
1/4 creamy peanut butter (I used reduced fat)
1 1/2 T light colored corn syrup
2 1/2 tsps vanilla extract
1 large egg

Preheat oven to 375.Combine flour, cornstarch, baking powder and soda in medium bowl,stir well, set aside. Combine brown sugar, 1/4 c granuated sugar,vegetable oil and peanut butter in large bowl. Beat medium speed with mixer til well blended. Add corn syrup, vanilla, and egg; beat well. Stir in flour mixture.
Coat hands lightly w cooking spray, shape dough into 48- 1 inch balls (I used a cookie dough scoup sprayed w cooking spray instead to avoid the mess). Roll in 3 T. granuated sugar (I didnt use the extra sugar) place two inches apart on cookie sheet sprayed with cooking spray, then flatten balls with bottom of glass (I used a glass with a decorative bottom sprayed with cooking spray that made a nice starlike design). Bake at 375 for 7 minutes or til cookie bottoms are lightly browned. Remove from cookie sheet, cool on cookie rack
