4 Granny Smith apples OR Rome apples any hard apple
SYRUP - BOIL TOGETHER:
1/4 Cup water -- plus 2 tablespoons
2 Tablespoons orange juice
3 Tablespoons brown sugar
2 Tablespoons granulated sugar
Pinch cinnamon
1 Teaspoon lemon juice
2 Teaspoons lemon zest
1/8 Teaspoon salt
1 Tablespoon brown sugar -- to top (optional)Recipe
Heat oven to 350øF. Mix together syrup ingredients and bring to a boil. Peel the apples, removing only about the top two inches. Core the apples and place them upright in a baking dish. Pour the syrup over and into the apples. Cover with foil and bake for 30 minutes. A fork will glide through the apple when done. Sprinkle tops with a little extra brown sugar and broil for 3 minutes. Serve warm with ice cream, whipped cream, crŠme fraîche or plain cream. Serves 4.
