    1 1/2 cups Bisquick Reduced Fat Baking Mix *
    3/4 cup splenda granular
    1 tsp white distilled vinegar
    1 cup water
    1 tsp vanilla extract
    1 tbsp + 1 tsp I Can't Believe It's Not Butter Light Margarine
    4 cups (8 small) cored, peeled, and sliced cooking apples
    1 1/2 tsp Jo's Apple Pie Spice or any apple pie spice
    2/3 cup fat-free milk

    Preheat oven to 400 degrees. In a medium saucepan, combine 1/4 cup baking mix and splenda. Stir in vinegar and water. Cook over medium heat until mixture thickens and starts to boil, stirring often. Continue boiling for 1 minute, stirring constantly. Remove from heat. Stir in vanilla extract and margarine. Place saucepan on a wire rack. Meanwhile, arrange apple slices in an ungreased 8x8 baking dish. Sprinkle JO's apple pie spice evenly over apples. In a large bowl, combine remaining 1 1/4 cups baking mix and milk. Spread mixture evenly over apples. Pour sauce mixture evenly over top. Bake for 30 minutes or until apples are tender. Place baking dish on a wire rack and let set for 5 minutes.

    Divide into 8 servings.
