Fruit: 4 pt. Blackberry Peach Cobbler

1 cup self-rising flour
1 tablespoon shortening
3/4 cup low fat buttermilk
1 tablespoon dry Butter Buds
1 cup blackberries
1 cup peaches
3 tablespoons sugar
1/3 cup sugar
3 tablespoons cornstarchRecipe
In an 8 x 8 inch pan, toss the fruit with the 1/3 cup sugar and the cornstarch. (I spray pan with PAM to help cleanup-). In a separate bowl, cut the shortening into the flour, till it looks like cornmeal (as if you were making biscuits-). Toss in the butter buds, 2 Tablespoons of the sugar, then the Buttermilk. Pour this over the berries (it is sorta runny). Sprinkle the last tablespoon of sugar over it. Bake at 420 for about 35-40 minutes.
Serves 6. (if you only break into 4 servings, then it'd be 6 pts. per serving)
320 calories, 4 grams of fat, 4 grams of fiber if you make four servings. =6 points.
If six servings, 215 calories, 4 points.
