Pie: 2 pt. Mock Coconut Cream Pie

List of Ingredients
2 c spaghetti squash -- cooked & into strands
1 c skim milk
1 c egg substitute
1/2 c evaporated skim milk
1/4 c flour
1/4 c sugar
2 tbsp Brummel & Brown Yogurt Spread -- plus 2 teaspoons
1/2 tsp vanilla
1/2 tsp coconut extract
1/2 tsp double-acting baking powderRecipe
Preheat oven to 350¡. Spray a 9" pie plate with nonstick cooking spray. Using a back of a spoon, spread squash over bottom & up sides of plate. Set aside. In blender combine remaining ingredients & blend until smooth. Pour mixture over squash. Bake 50 minutes to 1 hr or until knife inserted in center comes out clean. Cool pie on rack & let stand for 1 hr. Cover with plastic wrap and refrigerate overnight.
Serves 8. (2 pts per slice)
