    1 can Easy Pumpkin Pie Mix (I used Libby's brand)
    2/3 cup Fat Free Evaporated Milk
    1/2 cup fat free egg substitute (such as Egg Beaters)
    1 9-inch frozen ready-to-bake pie crust

    Recipe



    Preheat oven to 425. Mix the pumpkin pie mix, fat free evaporated milk and egg substitute together until blended. Pour filling into frozen pie crust. Bake for 15 minutes then reduce heat to 350 and bake for another 50-60 minutes until knife inserted in the center comes out clean. Allow to cool on a wire rack for at least 2 hours.

    Serves 8.

    Original Poster's Notes: I recommend cooling for at least 2 hours then transferring to the refrigerator to chill. Top with 2 tbsp. fat free whipped topping per slice for no additional points!
