    List of Ingredients




    1 small zucchini, grated
    1 medium uncooked potato, peeled and grated
    1 medium carrot, grated
    1/4 cup grated onion
    3/4 cup egg substitute
    Salt & pepper to taste
    12 slices whole wheat bread, toasted
    Sliced red onion and lettuce leaves, optional
    Sliced tomatoes

    Recipe



    In a bowl, combine the first six ingredients; mix well. Pour about 1/2 cup batter onto a hot friddle lightly coared with nonstick cooking spray. Fry for 2-3 minutes on each side or until golden brown. Serve on toasted bread with onion, lettuce, and tomato.

    Makes 6.
