    2.5 pt. Enchiladas

    List of Ingredients




    7 Fat free Tortillas
    2c. MorningStar Farms Grillers (Hamburger Style)
    1 Med. Onion
    1c. Mushrooms
    26.5oz Can Of Manwich
    1C. Heathy Requests Cream Of Chicken Soup
    8Tbsp Fat free Sour Cream
    2/3c. Fat free Mozzarella Cheese


    Instructions
    Over Med. heat cook the onions and mushrooms in pam spray until they are softened. Add the can of Manwich and stir to comb. Reserve at least a 1/3c. of the Mamwich mixture. Fill the 7 tortillas with the Manwich. Place in a casserola dish. Combine the sour cream, reserve manwhich and the soup. Pour over the top of the enchilladas. Bake at 350 for a half an hour. Top with the cheese and bake until golden brown.


    Special Notes
    This is the healthy version of a dish I have been making for about 3 years. One of my daughters favorite. She loves the healthy version just as well. It sounds like a very odd mix, but trust me it is a must have. These are a little under 2.5 points each.
