1/4 c canned pinto beans
1/8 c reduced-fat low sodium chicken broth
1 tsp chili powder
2 Tbsp chopped onion
1/4 c chopped lettuce
1/4 c chopped tomato
1/2 c grated part-skim mozzarella cheeseRecipe
Preheat oven to 350. Bake tortilla for 10 min. Mash beans with broth and chili powder; warm over low heat 5 minutes. Layer beans, onion, lettuce, and tomato on tortilla; top with cheese.
