1 1/2 cups elbow macaroni uncooked
1 15 ounce can vegetarian chili with beans
1 16 ounce can dark red kidney beans drained
1/2 teaspoon chili powder
3/4 cup (3 oz) reduced fat sharp cheddar cheese shredded
1/2 cup nonfat sour cream Recipe
Cook macaroni according to package directions, omitting salt and fat. Drain well and set aside. Combine chili, kidney beans and chili powder in a large nonstick skillet. Add macaroni. cook over medium heat 5 mins or until hot, stirring often. Spoon inot individual serving bowls. Sprinkle with cheese and top evenly with sourcream. Serve with tossed green salad and cornbread sticks. Serves 6.
