    Fish: 7 pt. Garlicky Shrimp & Cannellini Beans

    List of Ingredients

    15 ounces beans, white, canned - drained & rinsed
    1 tablespoon olive oil
    1 clove garlic minced
    1 cup chicken broth (can use water)
    4 ounces shrimp shelled
    1/4 cup basil chopped
    1 pinch red pepper flakes or to taste
    1 pinch salt or to taste
    1 pinch pepper, black or to taste

    Recipe

    1. Simmer beans, olive oil & garlic uncovered for 10 minutes.
    2. Add water or chicken stock to make the mixture soupie, I used 1 cup.
    3. Shrimp can be frozen or fresh, cut into 1/2 inch pieces. Add Shrimp, cover & simmer 5 minutes or until shrimp turns pink.
    4. Add fresh basil and season well to taste with salt, black pepper and crushed red pepper. Fresh parsley can be substituted for basil.
    5. Serve with a salad wrapped in tortilla. Don't forget to add extra pts

    Serves 2.
