    Beef: 4 pt. Ground Beef Veggie Casserole

    List of Ingredients

    8 oz.Extra lean ground beef (we use 96% lean)
    15 oz. can of green beans
    15 oz. can of corn
    15 oz. can of diced stewed tomatoes
    15 oz. can of potatoes
    10 ff saltine crackers
    1 medium onion diced into chunks
    salt and pepper to taste

    Recipe

    Pre heat oven to 350. Brown ground beef in pan on medium heat until about 1/2 done and add the onions and a little water or ff broth to keep moist (this beef is very lean remember so the water helps) completely cook the ground beef and onion mixture.

    Drain the veggies except for the tomatoes and put all in a bowl and mix with the ground beef mixture. add salt and pepper to taste. Spray a casserole dish with pam and pour the veggie/meat mixture into the pan. crush the saltine crackers in a baggie and spread on top of casserole. Bake for about 30 minutes or until the top is brown....

    this is really yummy and you can add more veggies if you would like....high in taste and low in points!

    Serves 4. 4 pts. per serving
