    Beef: 5 pt. Casserole Cabbage Rolls

    1 lb. lean beef (or subs crumbles)
    1 med. chopped onion (more if you like)
    1/4 uncooked rice
    1 10oz can tomato soup
    1 can water
    3 C coursely chopped cabbage
    Salt, pepper, garlic to taste

    Recipe



    Brown beef, onion, and spices. Add tomato, rice, and water. Stir. Spray a casserole dish or roaster with Pam. Put cabbage on the bottom, then add meat mixture (don't stir). Cover and bake for 1 to 1 1/2 hours at 350 oven.

    Serves 4 = 5 points each with beef.

    Original Poster's Notes: I put my rice over the top of the cabbage before i put the mixture on top. This way it cooks up fluffier. If I'm going to have a large group for dinner i double it and buy the cabbage slaw mix - already shredded - even though there's carrots in it - it works great!!
