    Beef: 5 pt. Crockpot Savory Beef Fajitas

    List of Ingredients

    1 beef flank steak (2 lbs.) thinly sliced
    1 cup tomato juice
    2 garlic cloves, minced
    1 tbs. minced fresh cilantro or parsley
    1tsp. chili powder
    1 tsp. ground cumin
    1/2 tsp. salt
    1/2 tsp. ground coriander
    1 med. onion, sliced
    1 med. green pepper, julienned
    1 med. jalapeno, cut into thin strips
    12 flour tortillas (7")
    Sour cream, guacamole, salsa or shredded Cheddar cheese, optional

    Recipe

    Place beef in a slow cooker. Combine the next 7 ingredients; pour over beef. Cover and cook on LOW for 6-7 hrs. Add onions, pepper and jalapeno. Cover and cook 1 hr. longer or until meat and vegetables are tender. Using a slotted spoon, place about 1/2 cup of meat vegetable mixture on each tortilla. Add desired toppings. Roll up. Serves 12.
