    Chicken: 6 pt. Chicken Peanut Wraps

    List of Ingredients




    3 T. ginger-garlic or other stir fry sauce
    1 T. rice or cider vinegar
    1 T. Peanut butter
    3/4 pound of thin chicken breast strips for stir frying
    1/2 C. chopped green onions
    2 C. purchased oriental-style or other mixed salad greens, finely chopped
    4 (8 to 10 inch) flour tortillas, heated

    Recipe



    1. In small bowl, combine stir-fry sauce, vinegar and peanut butter; blend until smooth. Set aside.
    2. Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot.
    3. Add onions; cook and stir an addtional 1 to 2 minutes or until chicken is no longer pink. Remove skillet from heat. Add sauce mixture; stir until chicken is well coated.
    4. To serve, spoon salad greens evenly onto center of each warm tortilla. Top each evenly with chicken mixture. To roll, fold sides of each tortilla over filling; fold in bottom, overlapping edges. Roll up tightly.
