List of Ingredients
1 pound boneless, skinless chicken breast, cubed
1 cup dried apricots, chopped
1 bunch scallions, thinly sliced (white and green parts separated)
2 tsp. peanut oil (I use sesame oil and it's delicious)
1/4 cup fat free chicken broth
3 tbsp. rice wine vinegar
3 tbsp. ketchup
2 tbsp. sugar
1 tsp. cornstarch dissolved in 1 tbsp. waterRecipe
Heat oil in a large pan over medium heat. Add white parts of scallions and saute until soft, about 3 minutes. Add chicken and stir fry 3-5 minutes. Meanwhile, combine chicken broth, vinegar, ketchup, and sugar, stirring well to blend. Add sauce to chicken, along with dried apricots. Cover and simmer another 3-5 minutes, or until chicken is cooked through. Remove cover, stir in dissolved cornstarch, and cook until thickened.

This recipe is absolutely delicious, not to mention easy. Since dried fruit can be a pain to cut, I put the apricots in the refrigerator for a while so they harden a little, then I use kitchen scissors to cut them into small pieces. I serve this meal with white rice and oriental style veggies and it is a big hit. You use the green parts of the scallion to garnish the dish before serving. Shared by: cook4u730
