Chicken: 6 pt. Cinnamon Grilled Chicken

1 8-oz can pineapple slices in juice, un-drained
1 tsp. low-sodium soy sauce
tsp. Ground cinnamon
4 4-oz skinless, boneless chicken breast
Cooking spray
8 lettuce leaves
1 c. mango chutney (Major Gray has a nice one)Recipe
1. Drain pineapple, reserving juice. Cover pineapple, and store in a refrigerator. Combine juice, soy sauce, and cinnamon in a large heavy-duty zip-top bag. Add chicken and seal bag, turn to coat and marinate 8 hours, turning occasionally.
2. Coat grill rack with cooking spray, *place on grill over medium coals (350¡-400¡). Place chicken on rack, grill, covered, 5 minutes on each side or until done. Place pineapple on grill the last 3 minutes of cooking.
3. Place lettuce leaves on four individual serving plates. Top evenly with chicken and pineapple. Spoon 2 tablespoons chutney over each serving.
Serves 4.
