Fish: 4 pt. Crispy Parmesan Roughy

2/3 cup whole wheat bread crumbs
1/4 cup Parmesan cheese
1/2 teaspoon paprika
4 6-ounce orange roughy fillets
1/4 cup skim milkRecipe
Preheat oven to 450 degrees. Coat a baking sheet with nonstick spray. Mix first 4 ingredients together in a shallow dish. Dip fillets into milk, then coat them with crumb mixture. Place fillets on the prepared baking sheet, and bake for 8-10 minutes, or until coating is browned and fish flakes easily with a fork.
Serves 4.
