    Fish: 7 pt. Cheesy Fish Fillets with Spinach

    List of Ingredients

    2T Lite butter
    2T Flour
    1t inst. chicken boullion
    Dsh nutmeg
    Dsh red pepper
    Dsh white pepper
    1C FF evaporated milk
    2/3C lite shredded cheddar
    1 pkg frozen chopped spinach thawed & well drained
    1T lemon juice
    11/2# fish (preferably cod)
    1/2t salt
    Parmesan cheese (opt)
    Paprika (opt)

    Recipe

    In sauce pan melt butter and then add next 5 ingredients and blend together. Add milk while on medium heat and constantly stir until mixture thickens. Put spinach in bottom of 7 1/2x12 baking dish and sprinkle with lemon. Put fish fillets on top and cover everything with cheese sauce. Bake at 350 for 20-25 min. or until fish begins to flake. As an option you can add Parmesan and paprika and bake another 2 minutes.

    Serves 4.

    Original poster's note: Just to save a part of a point I don't use the parmesan. It is very good without it.
