Pasta: 4 pt. Meat Sauce for Spaghetti

List of Ingredients
2 tablespoons of olive oil
1 cup of sliced onions
8 oz. of sliced fresh mushrooms (or canned, drained)
3 cloves of garlic, crushed
1 pound of lean ground beef
1 tablespoon of dried basil
1 can (6 oz.) of tomato paste
1 can (28 oz.) of whole tomatoes (drain off juice)
1/2 teaspoon of black pepper
1/2 teaspoon of salt
1/4 teaspoon of cayenne or crushed red pepperRecipe
1. In a 4-quart saucepan, heat the oil and saute the onion, mushrooms, and garlic over medium-low heat for about 5 minutes or until the onions are translucent.
2. Add ground beef and continue to cook for about 5 minutes or until beef is browned. Drain visible fat.
3. Add remaining ingredients and blend well together, breaking up the whole tomatoes with the spoon as you stir (I find it easier to just chop the tomatoes into chunks before I add it to the meat).
4. Cover the pan, reduce heat, and cook on low for 1 hour.
Makes about 8 cups of meat sauce (1 cup = 4 points)
