1 15oz tub of fat free ricotta cheese (7 points)
1 8 oz part skim mozzarella cheese (16 points)
1 box of ziti (1 pound) (32 points)
3 cans of Delmonte stewed tomatoes (0 points) -You can use any 0 point sauce you like! **Just use at least 36 oz
1/2 tablespoon olive oi (2 points)
5-6 white mushrooms cut into slices (0 points)
green pepper 1/2 of whole sliced (0 points)
red pepper same amount as green pepper (0 points)
half onion diced up (1/2 point)
whole zucchini sliced up (0 point)
whole yellow squash sliced (0 point)
1 pkg. of chopped frozen thawed and squeezed spinach (0 point)
garlic cloves sliced to taste. I like lots of garlic so I use about 4 or 5 cloves! (0 point)Recipe
Preheat oven to 400 degrees. Prepare ziti according to pkg. directions. Prepare your vegetables and saute in pan with 1/2 tablesppon olive oil on medium heat till tender. When pasta is done add to a large bowl and add one can of sauce to it to keep it moist. Add vegetables and stir gently.
Mix tub of ricotta with a can of sauce mix well. And add to mixture. Add mozzarella and last can of sauce mix well. Add to a very large baking pan. Bake for 45-60 minutes. Let set for 5 minutes and then divide the pan up to 8 pieces or more.
Serves about 8. It should work out to be 7 points per chunk of ziti. And you get a lot of food for these points!!
