    List of Ingredients




    1 tea olive oil
    1 onion, chopped
    1/2 green pepper, seeded and chopped
    1 garlic clove, minced
    1 14 1/2 oz can Italian style stewed tomatoes
    1/4 pound skinless boneless chicken breast, cubed
    2 T dry red wine
    1 cup penne or ziti
    2 Tbl grated parmesean cheese

    Recipe



    In large skillet, heat the oil. Add the onion, pepper and gralic. Cook stirring as needed until softened, about 5 min. Add the tomatoes, chicken and wine; bring to a boil. Reduce the heat and simmer, covered until the chicken is cooked through, 5 -6 min. Meanwhile, cook the penne. Drain and place in a serving bowl. Add the chicken mixture; toss to combine. Serve, sprinkled with the cheese.
