    List of Ingredients




    vegetable cooking spray
    1/2 cup onion -- diced
    1/2 cup red bell pepper -- diced
    1 clove garlic -- minced
    1 teaspoon cajun seasoning
    15 ounces black beans, canned -- rinsed and drained
    10 ounces tomatoes with green chilies -- undrained
    3 ounces turkey kielbasa -- halved lenghtwise, and thinly sliced
    7 cups penne pasta -- (about 3 cups tube-shaped pasta) uncooked
    1/2 cup four-cheese Mexican-style shredded cheese

    Recipe



    Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add onion, bell pepper, and garlic; sautŽ 5 minutes. Add seasoning; sautŽ 1 minute. Add beans, tomatoes, and kielbasa; bring to a boil. Reduce heat; simmer 10 minutes or until thick.
    Combine bean mixture and pasta in a large bowl. Top with cheese.

    Serves 8. NOTES : Serving Size: 1 cup
