Pizza: 2 pt. Pepperoni Pizza

1 1/4 cup bread flour
1/3 cup Quaker Oat Bran
1 1/2 tsp Rapid Rise Yeast
1 tsp sugar
1/4 tsp salt
1/2 cup + 2 tbs water
1 cup Healthy Choice spaghetti sauce (about 45 cals per serving- any variety)
1/2 cup Kraft Free Mozzarella

To make in a bread machine, place all of the dough ingredients in the bread pan. (Do not heat the water). Turn the machine to "rise", "dough", "manual", or equivalent setting so that the machine will mix, knead, and let the dough rise once. Check the dough 5 minutes after the machine has started mixing. If it seems to sticky, add a little flour, 1 tbs at the time. When the dough is ready:
Remove the dough from the machine and shape into a ball. Turn onto a lightly floured surface. Using a rolling pin, roll the dough into a 14-inch circle. Coat a 14-inch pizza pan with nonstick cooking spray, and place dough on the pan. Spread the sauce over the crust to within 1/2 inch of the edge. Sprinkle the cheese over the sauce and top with the pepperoni.
Bake at 475 degrees for 10 minutes, or until the cheese is melted and the crust is lightly browned. Cut into wedges and serve immediately.
Serves 8.

If you don't have a bread machine, combine 1/2 cup flour with all of the oat bran, yeast, sugar, and salt in a large bowl. Mix well. Place the water in a small saucepan and heat until very warm (125-130 degrees F). Add the water to the flour mixture and stir for 1 minute. Stir in enough flour, 2 tbs at a time, to form a stiff dough. Sprinkle 2 tbs of remaining flour over a clean surface. Turn the dough out and knead for 5 mintues. Gradually add enough of the remaining flour to make a smooth, satiny ball. Coat a large bowl with nonstick cooking spray, and place the dough in the bowl. Cover with a kitchen towel and let rise in a warm place for about 35 minutes, or until doubled in size. When dough is ready, punch down and proceed with shaping.

I have been told that the per-piece points are right between 2 and 3, but note that this recipe can also be made with whole wheat flour, which will yield a definite 2 pt slice.
Tips: fresh zero-point veggies can be added to the topping, as well as low-fat sausage, such as Jimmy Dean 97% Fat-Free breakfast sausage. Be sure to pre-cook the sausage before crumbling on top of pizza. 2 servings of the Jimmy Dean 97% Fat-Free Sausage can be used to cover the entire pizza, adding a total of .5 points to each slice.
Instead of rolling the dough out onto a floured surface, you can also lightly spray your hands with nonstick cooking spray and press the dough into the prepared pizza pan. This works equally as well and saves on clean-up!
