Pizza: 2 pt. White Mini Pizzas

List of Ingredients
4 English muffins, split and lightly toasted
1 clove garlic, halved
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
3 ounces nonfat mozzarella cheese, thinly sliced
1/2 cup nonfat ricotta cheese
2 tablespoons grated Parmesan cheese
2 medium tomatoes, thinly slicedRecipe
Preheat broiler. Place English muffins, cut-sides up, on a baking sheet. Rub cut-sides of garlic over English muffin tops. Sprinkle evenly with basil and oregano. Top with mozzarella slices. In a medium bowl, combine ricotta and parmesan. Mix well. Spread cheese mixture evenly over mozzarella. Place tomato slices over cheese mixture. Broil pizzas 4 inches from heat, until cheese melts, about 5 minutes. Place pizzas on individual serving plates. Serve immediately.
Makes 8 servings.
Prepare in advance: To have mini pizzas ready for snacktime, prepare as recipe directs, but do not broil. Cover with plastic wrap and refrigerate for up to 2 days. Proceed as recipe directs.
Cooking Tips: Choose a variety of toppings for these mini pizzas. Try adding fresh mushrooms and cooked broccoli flowerets on top of the cheese mixture. Roasted red peppers and herbs make another tasty topping. Add chopped fresh oregano and basil to cheese mixture; top with peppers and more herbs.
