    Pork: 4 pt. Cheesy Ham Bake

    List of Ingredients




    2 cups shredded nonfat or reduced fat cheddar cheese
    2 cups dry curd or nonfat cottage cheese
    2 cups fat free egg substitute
    8 oz 98% lean ham dices (about 1 1/2 cups)
    3/4 cups scallions
    2 T unbleached flour
    1 tsp Tabasco pepper sauce
    4-5 med potatoes, scrubbed (unpeeled)

    Recipe



    Combine all of the ingredients except for the potatoes in a large bowl and stir to mix well. Set aside. Coat a 13x 9 inch baking dish with nonstick cooking spray. Slice the potatoes 1/4 inch think and line the bottom and the sides of the pan with the slcies to form a crust. Pour the egg mixture over potatoes. Bake, uncovered at 375 for 1 hour or until the filling is set and the top is touched with brown. Allow to sit for 5-10 min before cutting into squares and serving.
