Pork: 5 pt. Pork w/ Red Beans & Greens

List of Ingredients
1 cup chopped red onion
4 garlic cloves
1/4 cup chicken broth
1/4 cup water
3/4 pound collard greens
3/4 pound mustard greens (I use kale sometimes)
Salt to taste
Nutmeg to taste
Marjoram to taste
2 cups chopped tomatoes
1 cup V-8 juice
8 oz. tomato sauce
19 oz. can of red kidney beans, rinsed
1 tablespoon red wine vinegar
2 teaspoons olive oil
3/4 pork tenderloins
1 tablespoon flourRecipe
Simmer the onion and garlic in the broth/water for 5 mins. Add the greens, salt, marjoram, nutmeg. When wilted, add tomatoes, V-8, tomato sauce, vinegar - simmer 5 mins. Add the beans - simmer 5 mins. Dust cubed pork with flour - Saute in olive oil When the pork is cooked, toss it into the greens and warm through.
