List of Ingredients
1/2 cup apple juice
1 cinnamon stick
12 oz boneless skinless turkey breast cutlets
1/2 cup orange juice
1/4 cup raisins
1/4 cup balsamic vinegar
1 tablespoon orange zest -- grated
1 tablespoon fresh mint -- optional
2 teaspoons olive oil
1 teaspoon brown sugar
1/4 teaspoon black pepper -- coarsely ground
4 cups spinach leavesRecipe
In a large nonstick pan bring apple juice & cinnamon stick to boil. Add turkey. Reduce heat to low & simmer, partially covered, 7-9 minutes or till cooked through. Then with a slotted spoon transfer turkey to a plate. Reserve the juice & discard the cinnamon stick.
Add orange zest, mint, oil, sugar & pepper to skillet. Bring to a boil. Reduce heat to low & simmer 4-5 minutes, until it's reduced by half. To serve, line 4 plates with 1/4 of the spinach leaves & top each with a turkey cutlet. Then spoon equal amounts of the sauce over each plate.
Serves 4. 4 pts per serving.
