    1 pt. Mock Mayonnaise

    List of Ingredients

    1 cup cottage cheese, low fat
    1/4 cup egg substitute, liquid
    1 tablespoon white vinegar -- or lemon juice
    2 tablespoons sugar
    1/2 teaspoon salt -- optional
    1/2 teaspoon dry mustard
    1/2 teaspoon paprika
    pinch pepper

    Recipe

    Combine all ingredients in blender. Cover and blend on medium speed until smooth, scraping down container with rubber spatula as needed. Store covered in fridge. Makes 1 cup. Serving size is 1 tbl.
