2 cups All Bran Extra Fiber cereal
1 cup lowfat buttermilk
3/4 cup applesauce
1/4 cup egg beaters¨ 99% egg substitute
1/4 cup prune puree (Lighter Bake)
1/2 cup brown sugar
1 tsp vanilla
1 apple diced (I leave the skin on)

1/2 cup wheat flour
1/2 cup oat flour
1/2 cup Quaker Multigrain (can be found in a canister with the Quaker Oats)
1 tsp baking soda
1/4 tsp salt
2 tsp cinnamon
1/4 tsp nutmeg Recipe
Mix All Bran Extra with wet ingredients and brown sugar. Let stand to soften All Bran. Stir in dry ingredients. Spoon into prepared muffin tins. Bake at 400 degrees for 16 minutes. Let stand 10 minutes or so before removing from muffin pan.
Makes 14 muffins.
Each muffin has just over 100 calories, about 5 grams of fiber, and less than 1 gram of fat. For those of you on the Weight Watchers program, that comes out to 1 point!
