2.5 pt. Strawberry Shortcake Muffins

List of Ingredients
Dry ingredients: mix the following until just coated.
5 cups flour
2/3 cup sugar
2-1/2 teaspoons baking powder
2-1/2 teaspoons baking soda
2-1/2 cups frozen unsweetened strawberries, chopped Be SURE strawberries areFROZEN!
In a separate large bowl mix wet ingredients:
Ê2-1/2 cups low fat buttermilk
3 eggs
2 egg whites
2 Tablespoons canola oilRecipe
Pour wet ingredients into dry. Mix quickly, just until the flour disappears. DO NOT OVER MIX!!! Spray muffin tins with non-stick cooking spray. Fill each muffin tin hole 3/4s full with batter. Top each muffin with about 1/4 teaspoon of sugar. Bake in a 350¼ oven for about 15 to 20 minutes.
