List of Ingredients
1 c. whole wheat flour
1/2 c. all purpose flour
1 tsp. baking soda
1/2 to 1 tsp. ground nutmeg
1/8 tsp. salt
2 egg whites, slightly beaten
1 egg, lightly beaten
1 c, mashed ripe bananas (1 to 2 medium)
1/2 c. unsweetened applesauce
6 T. honey
1/2 c. golden raisinsRecipe
In a large bowl, combine the first 5 ingredients. Combine the next 5 ingredients; stir into dry ingredients just until moistened. Fold in raisins. Coat muffin cups with nonstick cooking spray; fil two-thirds full with batter. Bake at 375¼F for 15-18 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.
Makes 14 muffins.
