    List of Ingredients




    2 1/4 c. flour
    1/3 c. brown sugar
    1 tsp cinnamon
    1 tsp vanilla
    1/2 tsp baking powder
    3 grated carrots
    8 oz. non-fat vanilla yogurt
    1/2 c. egg substitute
    1/2 c. sugar
    1 tsp baking soda
    1/4 tsp ginger
    1/2 c. raisins
    1/2 c. unsweetened applesauce

    Recipe



    Mix dry ingredients together. Mix liquid ingredients, combine; mixing only until all ingredients are moist. Pour into greased jumbo muffin cups. Bake at 350¼ for 30 minutes.

    *Makes 6 jumbo- 4 pts or 12 regular muffins -2 pts.
