2 pt. Oat Bran Muffins

2 cups oat bran uncooked
1/4 cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt optional
1 cup skim milk
2 egg whites slightly beaten
1/4 cup honey
2 tablespoons vegetable oil Recipe
Heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups or spray bottoms only with no-stick cooking spray. Combine dry ingredients; mix well. Add combined milk, egg whites, honey and oil; mix just until dry ingredients are moistened. Fill prepared muffin cups 3/4 full. Bake 15 to 17 minutes or until golden brown.

Per serving: 1 plain muffin-120 Cal, (cal from fat 27), total fat 3g, sat fat 0g, choles 0mg, sodium 90mg, total carb 19g, fiber 2g, pro 4g.
*Variations: Stir into batter 1/2 cup fresh or frozen BLUEBERRIES or 1/2 cup (1 med) mashed, ripe BANANA. POINTS: 2 per muffin, also. I also like to add 1tsp. cinnamon to mine.
