    1 serving cooking spray (5 one second sprays)
    1 cup buttermilk
    2 large egg(s)
    4 Tbsp unsalted butter, melted and cooled
    1 tsp almond extract
    1/2 cup dark brown sugar
    1 2/3 cup all-purpose flour
    1/2 tsp baking powder
    1 Tbsp baking soda
    1/2 tsp table salt
    1 1/4 cup sour red cherries
    1/4 cup sugar
    2 fl oz liqueur, any type, amaretto

    Preheat oven to 375�F. Coat 2 muffin tins with cooking spray. In a large bowl, whisk together buttermilk, eggs, butter and almond extract. Whisk in brown sugar. Add flour, baking powder, baking soda and salt; stir to combine. Fold in cherries. (Note: If you can�t find sour cherries, use frozen ones that have been thawed or canned cherries that you rinse and drain well.)

    Spoon mixture into prepared muffin tins until 18 holes are 3/4 full each. Bake until a toothpick inserted in the center of a muffin comes out clean, about 20 to 22 minutes. Cool in pan on a wire rack.

    Meanwhile, to make glaze, combine sugar and liqueur in a small saucepan over medium heat. Stir constantly until sugar is dissolved. Bring to a boil, reduce heat to low and simmer until a syrup is formed, about 10 minutes. Brush over cooled muffins.
