3 pt. Chocolate Chip Mini Muffins

1 cup all-purpose flour
2 tablespoons all-purpose flour
1/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup skim milk
1/4 cup Canola oil
1/4 cup Egg Beaters 99% egg substitute -- * see note
1 1/2 ounces miniature chocolate chips
1 tablespoon grated orange peel Recipe
1. Preheat oven to 400¼ F. Line 24 mini muffin cups with paper lines.
2. In large bowl, combine flour, sugar, baking powder and salt. Add milk, oil and egg substitute; stir just until combined. Stir in chocolate and orange peel; mix just until combined.
3. Spoon batter evenly into prepared cups, filling each about two-thirds full. Bake 12-15 minutes, until golden and toothpick inserted in center comes out clean. Remove from pan; cool completely on rack.
* Original recipe called for an unknown variety egg substitute.
