    3 pt. Lemon-Poppy Seed Muffins

    1 3/4 cups all-purpose flour
    1/2 cup sugar
    5 teaspoons poppy seeds
    2 teaspoons baking powder
    1/4 teaspoon salt
    1 cup skim milk
    3 tablespoons vegetable oil
    1 tablespoon grated lemon rind
    1 tablespoon fresh lemon juice
    1 large egg lightly beaten
    cooking spray

    Preheat oven to 400 degrees F. Combine first 5 ingredients in a large bowl; make a well in the center of mixture. Combine milk and next 4 ingredients in a bowl; stir well. Add milk mixture to dry ingredients, stirring just until moist. Divide batter evenly among 12 muffin cups coated with cooking spray. Bake at 400 degrees F. for 25 minutes or until golden. Remove muffins from pans immediately; let cool on a wire rack. Yield: 12 muffins (serving size: 1 muffin).
