    3 pt. Oatmeal Cinnamon Muffins

    List of Ingredients




    1 1/3 cups all-purpose flour
    3/4 cup rolled oats
    1/3 cup brown sugar
    2 teaspoons baking powder
    1/4 teaspoon ground cinnamon
    1/4 teaspoon salt
    3/4 cup milk
    1/4 cup oil
    1 egg

    Recipe



    Preheat oven to 400øF. Grease 12 muffin cups or 24 mini-muffin cups. In bowl combine flour, oats, sugar, baking powder, cinnamon and salt. Add milk, oil and egg until just combined. Evenly divide batter among prepared muffin cups. Bake 15-20 minutes, until golden. Let cool 5 minutes in pan on wire rack. Remove from pan and serve warm or let cook completely on wire rack.


    Makes 12 (regular size) or 24 (mini muffins)

    According to recipe: Per regular size muffin: 136 calories, 3g protein, 5g fat, 5mg chol., 19g carbs, 122mg sodium; 1g fibre
