3 pt. Whole Wheat Banana Muffins

List of Ingredients
1 cup all-purpose flour
1 cup whole-wheat flour
1/4 cup toasted wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups mashed bananas 3 large, ripe
2/3 cup sugar
1/4 cup vegetable oil
1 large egg lightly beaten

Preheat oven to 350 degrees. Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine banana, sugar, oil, and egg; add to dry ingredients, stirring just until moist. Divide batter evenly among 16 muffin cups coated with cooking spray. Bake at 350 degrees for 20 minutes. Remove from pans immediately; let cool on wire rack.
Yield: 16 muffins(serving size: 1 muffin).

VARIATION: Whole-Wheat Banana Loaf - Preheat oven to 400 degrees. Prepare batter as directed. Spoon batter into a 9x5-inch loaf pan coated with cooking spray. Bake at 400 degrees for 40 minutes or until a wooden pick inserted in center comes out clean. Yield: 16 servings (serving size: 1 slice).
