Recipe Introduction
Make sure the pear you use is ripe yet still firm. Choose a Bosc, Bartlett, or Anjou for best results.

1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 tablespoons finely chopped pecans
1 1/2 cups quick-cooking rolled oats
1 large pear, peeled, cored and diced
1 cup nonfat buttermilk
1/2 cup firmly packed dark brown sugar
1/3 cup pure maple syrup
2 tablespoons vegetable oil

1. Preheat the oven to 400 degrees F. Spray a 12-cup muffin tin with nonstick cooking spray. In a medium bowl, combine the flour, baking soda, baking powder, cinnamon and salt. In a small bowl, combine the pecans and 2 tablespoons of the oats.
2. In a large bowl, combine the remaining oats, the pear, buttermilk, brown sugar, syrup, oil and egg; let stand 5 minutes. Add the dry ingredients to the pear mixture, stirring until just combined; do not overmix.
3. Spoon the batter into the muffin cups, filling each about three-quarters full. Sprinkle with the pecan mixture. Bake until a toothpick inserted in the center comes out clean, 18-20 minutes. Cool in the pan on a rack for 5 minutes. Remove the muffins from the pan; serve warm or at room temperature.
