1 cup plain low-fat yogurt
1/2 cup chopped leeks
1 tablespoon olive oil
1 tablespoon white wine vinegar
1/2 teaspoon salt
1/4 teaspoon dried tarragon whole
1/4 teaspoon pepper Recipe
Combine all ingredients in container of an electric blender; cover and process until smooth. Pour into a bowl; cover and chill at least 1 hour. Yield: 1 1/3 cups (serving size: 1 tablespoon).
