    1.5 pt. Crunchy Vegetable Salad

    List of Ingredients




    1 c. cauliflowerets
    1/2 c. chopped celery
    1/2 c. shredded carrot
    1 T. finely chopped green pepper
    1/4 c. fat-free mayonnaise
    2 T. skim milk
    1 tsp. snipped chives
    1 tsp. cider vinegar
    Dash pepper
    Lettuce leaves, optional

    Recipe



    In a bowl, combine first 4 ingredients. In another bowl, combine the next 5 ingredients; mix well. Pour over vegetables and toss to coat. Serve on lettuce if desired. Serves 2.
