    5 pt. Judy's Potluck Chicken Pasta Salad

    List of Ingredients




    1 pkg Rainbow Rotelle (12 oz)
    8 ozs cooked weight boneless skinless chicken breast
    3 stems chopped celery
    2 TB minced parsley
    1 clove crushed garlic
    1 green onion chopped
    2 TB finely chopped red onion
    3/4 cup fat free mayonaise
    1/2 cup fat free sour cream
    4 tb fat free italian dressing
    Desired amount of Salt and Pepper

    Boil Chicken in chicken broth...made from boullion or base. Remove chicken, let cool 15 minutes, then finely shred. While chicken in cooling, cook noodles in broth according to package directions. Transfer noodles to colander, drain, and rinse with cold water to cool, and keep from sticking. Transfer noodles to large salad bowl, and add all remaining ingredients. Toss well. Refrigerate at least 4 hours.

    Makes 8 servings (approx >1 cup each)
