2 teaspoons vegetable oil
2 medium onions, diced
2 medium carrots, diced
1 garlic clove, minced
5 cups low-sodium chicken broth
6 ounces dried green split peas
4 ounces cooked boneless lean ham, diced
1 teaspoon minced fresh rosemary leaves
1/4 cup minced fresh flat-leaf parsley, to garnish
Recipe
In large nonstick saucepan, heat oil; add onions, carrots and garlic. Cook over medium heat, stirring frequently, 3-5 minutes, until onions are softened. Add broth, split peas, ham and rosemary; bring liquid to a boil. Reduce heat to low; simmer, partially covered, stirring occasionally, 1-1 1/4 hours, until peas have dissolved and flavors are blended. Divide evenly among 4 bowls, sprinkle with parsley and serve. Serves 4, 5 pt. each
