Chili: 4 pt. Vegan Meatless Chili

Cooking spray
2 teaspoons minced garlic
1 large onion, chopped
1 (16-ounce) can chili hot beans, undrained
1 (14.5-ounce) can no-salt-added diced tomatoes, undrained
1 tsp. chili powder
1 tsp. ground cumin
12 ounces frozen vegetable and grain protein crumbles (about 3 cups)Recipe
Coat a 4-quart saucepan with cooking spray. Place pan over medium-high heat until hot; add garlic and onion. Cook 3 minutes, stirring often. Add beans and next 3 ingredients. Bring to a boil, stirring occasionally; reduce heat, and simmer 5 minutes. Add protein crumbles, and cook 3 minutes.
Yield: 4 (1 1/2-cup) servings.
For a quick meal: Serve with crackers and a tossed salad. Or spoon some of the chili onto a warm flour tortilla, sprinkle with shredded lettuce and cheese, and roll up for a burrito.
