Recipe Introduction
This is a variation on the "Free" Garden Vegetable Soup.
List of Ingredients
2/3 cup fresh beets peeled and diced
1/2 cup diced onion
2 cloves garlic minced
1 1/2 cup diced green cabbage
1/2 cup diced green pepper
1 cup diced fresh or canned tomatoes
3 cups fat free beef broth
1 tsp ground cumin
1/2 tsp lemon juice
salt & pepper to taste Recipe
Spray pan with non stick cooking spray. Saute onion, garlic, cabbage and green pepper until softened. Add broth, tomatoes, cumin, lemon juice and beets and simmer until beets are tender.
Serves 4.
Optional; Serve with 1 tbsp nonfat sour cream as a garnish (that adds 1/4 point)
For a heartier meal, add one large russet potato - peeled and cubed for a heartier soup but add 1 point per serving.
