    "A little bit of chorizo adds adventure to this black bean soup. Buy the spiciest sausage you can find to add lots of flavor for the least amount of POINTS."

    List of Ingredients




    1/4 pound chorizo
    1 small onion -- chopped
    1 clove garlic -- minced
    1 small red pepper -- chopped
    1 small green pepper -- chopped
    2 tbsp dry sherry
    1 tsp ground cumin
    1 bay leaf
    1 can canned black beans -- (15 oz) undrained
    1 can fat-free chicken broth -- (15 oz) sodium free
    1 lime -- juiced
    2 tbsp minced cilantro
    1/4 tsp salt and pepper

    Recipe



    Discard chorizo skin. Crumble meat and brown in 12" nonstick skillet for 2 minutes. Add onion, garlic and peppers. SautŽ over medium-high heat 5 minutes. Add to crockpot. Add sherry, cumin, bay leaf, beans and broth. Cover and cook on LOW 4 to 5 hours. Remove lid. Scoop out 1 cup beans and press with the back of a fork to mash. Return to pot. Add lime juice, cilantro, salt and pepper. Simmer uncovered just to warm through, about 5 minutes. Serves 8 (about 1 cup per serving)
