Soup: 3 pt. Chickpea Soup

List of Ingredients
1 tsp vegetable oil (I used olive oil)
1 onion, chopped
3 garlic cloves minced (I used 6)
One 19-ounce can chickpeas, rinsed a nd d rained
1 1/2 tsp minced fresh sage or 1/2 tsp dried
1/4 tsp freshly ground black pepper
2 cups vegetable broth
Half of a 10-ounce package frozen chopped spinach--thawed and squeezed dry
1/2 tsp salt
2 T fresh lemon juiceRecipe
In medium saucepan, heat oil and add onion and cook until soft--about 5 minutes. Add garlic; cook, stirring, 1 minute. Stir in chickpeas, sage and pepper. Stir in the broth, spinach, and salt; bring to a boil. Transfer the mixture to a food processor; puree (I used a hand held braun mixer and did it in the pot). Return to pot and simmer 5 minutes; stir in lemon juice.
Serves 4.
