Soup: 3 pt. Chunky Clam Chowder

original poster's note: I had a HUGE bowl, about a third of the pot ... and that was only 6 points!!! Hubby drained the rest of the pot, so I knew I had a success on my hands :) And I had the crazy idea this would be a two-nighter (not!!).
List of Ingredients
2 cans chopped clams
1/2 cup water
2 cup diced potatoes
1/3 cup chopped celery
1/3 cup diced onion
White pepper (I used black as I didn't have white - plus I am used to those black flecks in my clam chowder and wanted it to look as "normal" as possible)
2 cups corn
2 cup skim milk
3/4 cup evaporated skim milk
1 tablespoon corn starchRecipe
Drain claims, reserve juice Mix water, potatoes, celery, onion, pepper, 1/2 cup clam juice - bring to boil, then simmer for 7 mins. Add corn, simmer 5 mins. Add milk and 1/4 cup evaporated milk, simmer 5 mins. Remove one cup of the soup and blend it smooth in blender or food processor. Add it back in. (Here's the secret on how it seems so silky using skim milk; this thickens it up nicely.) Add clams Mix 1/4 evaporated milk and the cornstarch, add in and stir constantly until thick
